Hooooly maaaan. I’m not sure how much gluttonous punishment my body can take at this point. All I’ve gotta say is thank God for 25 year old male metabolism! As a Canadian, I feel, as a commitment to my country, a poutine grilled cheese had to join the ranks of National Grilled Cheese Month. Grilled bread, gravy, cheese curds, fries… I sent farewells and love to my family as I embarked upon this grilled cheese, unsure if I would make it through, certain an untimely demise was imminent. But alas, I am here, writing about it, with a renewed lust for life! This was one mean grilled cheese! Crunchy bread, with layers of rich gravy, salty, suuuper stringy melted cheese curds, surrounding crispy french fries! I suppose I can find solace in the fact that I used “healthier” fries, making this Baked French Fries to use in the grilled cheese!

As you can see above, some of the gravy even snuck out of a hole in the bread and received some tasty caramelization on the bread!

Bob, I will say that many people eat fries with grilled cheese and by putting them inside the sandwich, you have limited the serving size. I believe you have done a service for everyone who loves pouting. I hope we get to vote at month’s end for our favourite recipe. Keep up the grilling!

Haha good point Maureen! That is a great idea, I will have to create a poll for the top grilled cheese!

Oh my god. If there’s a heaven, and you can eat all day without risk of injury, this is what they’d serve. Goodness it looks amazing! I WISH THEY HAD CHEESE CURDS IN THE US. Ugh.

Beecher’s in Seattle has WONDERFUL salty cheese curds. I believe they ship country-wide.

I’m sure there are other cheese-makers who sell curds online!

I am cursed to live across the street from a restaurant/shop in Edmonton called The Cheese Factory, who sell cheese curds AND instant poutine sauce!

Living near cheese shops is a blessing and a curse!

What the heck? There ARE cheese curds in the US… I can get them at the grocery store in Iowa. Though they’re not as good as the squeaky fresh ones from Wisconsin.
